Chocolate Cupcakes with Peanut Butter Filling and Frosting

I'm back!

Now that the school year is almost over I'm going to start my blog back up this summer!




I made this recipe and brought it to my aunt's house for mother's day dessert!

It went over well and I had fun learning how to use a cupcake corer.


I was going to use a package but forgot to add it to my mom's shopping list so I used this recipe instead

Here is the cupcake recipe:



  1. Preheat oven to 350 degrees F (175 degrees C). Grease two muffin pans or line with 20 paper baking cups.
  2. In a medium bowl, beat the butter and sugar with an electric mixer until light and fluffy. Mix in the eggs, almond extract and vanilla. Combine the flour, cocoa, baking powder and salt; stir into the batter, alternating with the milk, just until blended. Spoon the batter into the prepared cups, dividing evenly.
  3. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter. Frost with your favorite frosting.





















This recipe is really easy and made me 24 cupcakes

After they came out of the oven I let them cool and then cored them

To core them you push in the corer to desired depth and then twist and pull up

If you don't have a corer you can improvise with a knife and just cut a circle

After they are cored put the piece you cored back in the hole



Now its time to make the frosting/filling



  1. Place the butter and peanut butter into a medium bowl, and beat with an electric mixer. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy


I put the frosting in a piping bag and filled the hole in the cupcakes almost all the way full and the put the cake piece back in





Then I frosted the top and put them in a air tight container 

They were really good and made just enough

Chex Lemon Buddies

Sorry about the delay.


With the end of school and beginning of the summer break
it has been a little chaotic in the house. 

Anyway, Tuesday I made Chex Lemon Buddies,
which is a more refreshing summer version of Puppy Chow.

It is a really easy recipe as long as you have a microwave and all the right ingredients.

You will need:

9 cups of Rice Chex cereal

1  1/4 cups of white vanilla baking chips 

1/4 cup of margarine or butter

4 teaspoons of grated lemon peel

2 tablespoons of lemon juice

2 cups powdered sugar



Now for putting together the refreshing treat.

Measure out the 9 cups of Chex into a large mixing bowl and set aside.

Then in a microwave safe bowl place the baking chips,
butter or margarine, grated lemon peel, and lemon juice.

Now put the bowl into the the microwave on high for 1 minute.
Stir. And put it back in the microwave for 30 seconds.

Now pour over Chex and mix it in.

Put the mix in a gallon sized Ziploc bag and pour in powdered sugar.
Then shake until evenly covered.

Now put in paper bags or they will get soggy over night.

Big Fat Chewy Chocolate Chip Cookies

So the winner of the cookie poll was chocolate chip,
so I made chocolate chip cookies this afternoon :)

I used a new recipe that I got off of Pinterest
and they are VERY good.

Nice and soft and chewy :)

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted and slightly cooled
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips


Preheat the oven to 325 degrees F.
Grease cookie sheets or line with parchment paper.

Sift together the flour, baking soda and salt; set aside.

In a medium bowl, cream together the melted butter,
brown sugar and white sugar until well blended.

 Beat in the vanilla, egg, and egg yolk until light and creamy.

 Mix in the sifted ingredients until just blended.


Stir in the chocolate chips by hand using a wooden spoon.

Put a golf ball size ball of cookie dough on a greased baking sheet

 Bake, reversing position of cookie sheets halfway through baking,
until cookies are light golden brown and outer edges start to harden
yet centers are still soft and puffy
(approximately 11-14 minutes). Do not over bake.

Cool cookies on sheets until able to lift without breaking.
Transfer to a wire rack to cool.

Apple Almond Pancakes

I have been making Saturday morning pancakes for over a year now.

I usually make them from the "just add water" bag mix,
but I wanted something new so I went on a program
that I have on my computer called Master Cook.

I made cookies the day before and used all the sugar,
so my biggest problem I had was I had to find a recipe
that I had all the ingredients for.

This was the very first recipe that popped up and I had all the ingredients
and I figured it would either be a hit or a miss.




This recipe I made this past weekend and my mom posted pictures on face book.

Apparently people liked the pics because I have had about 5 requests
for apple almond pancakes to be my next blog.

So to please the people here is the recipe :)


First you will need,


1/2 cup whole-wheat flour

1/2 cup unbleached flour

1 tablespoon brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 eggs, separated
4 tablespoons oil
1/2 cup buttermilk
1/2 cup apple juice
1/4 cup chopped almonds


Combine the flour, sugar, baking powder and salt in a mixing bowl.
Beat egg yolks with oil, buttermilk
(I didn't have buttermilk so I used vanilla yogurt instead)
and apple juice. 


Stir into flour mixture with nuts until all ingredients
are moistened (do not over stir).
Beat egg whites until stiff and fold into batter.
Spoon onto a hot, greased griddle and turn once when bubbles appear.
Makes 8 to 10 pancakes.

Since I come from a family of 7, I tripled the recipe and it was still delicious:)

Chocolate Oatmeal No-Bake Cookies

Hi my name Zoe and I LOVE to be in the kitchen.

When I grow up I want to be a pastry chef
because my favorite thing to do in the kitchen is to bake.

My mom set me up this blog because I wanted to share
some of my favorite recipes with other people.
The first recipe I'm going to show you is how to make
Chocolate Oatmeal No-Bake Cookies.

I have made this recipe about 5 times this month
and the batch was gone with-in a week.
You are going to need,

1/2 a cup of butter

2 cups of white granulated sugar

1/2 a cup of milk

4 tablespoons of cocoa powder

1/2 a cup of creamy peanut butter

3 1/4 of rolled oats

2 teaspoons of vanilla

First you have to stir the butter, sugar, milk, and cocoa powder into a saucepan.

Next bring the mixture to a rolling boil for one minute.

Stir in the peanut butter, oats, and vanilla.

Drop the dough on to a baking sheet lined with wax paper.

Let cool and set

Voila a perfect dessert in less then 45 minutes
